Buckweat with Onions and Carrots (vegan)
Coming back home after work sometimes can be nerve wracking, because you need to cook something and feed all the people in the house quick and tasty! Here is what I do when I need to feed somebody within 30 min.
For this recipe I used only the products I had at hand – buckweat, onions and carrots. And some seasoning, of course.
Firstly, I sliced 2 middle onions in a pole-to-pole style, added a little bit of oil to the pan and sauteed the onions, stirring it from time to time to get a light gold colour of it. Then quickly added some chopped carrots and left it for a while to let it give a nice orange colour to the oil.
When onions and carrots are soft enough, you can add a few bay leaves and your buckweat on top of it. (I always try to keep bay leaves at the bottom of a pan or a pot, that’s just the way I like it)
Cover it all with water (double as the level of buckweat) and let it boil on a low heat for about 15-20 min.
You want to add some seasoning, for sure!
When buckweat is done, sprinkle some greens on top (I had parsley and dill in my fridge), cover it, turn the heat off and leave it for a while.
This smell drives me crazy…
Before serving it, give it a nice stirr and voila! Tasty, simple and vegan meal is done for y’all family!
